This exceptional wine made from Grenache, Carignan and Cinsault shines thanks to a hand-picked harvest and low production, reaching only 25 hl/ha. The grapes were destemmed and fully fermented for seven days, followed by ageing in concrete vats, tanks and selected used oak barrels.
The colour is captivating with a deep violet-red that is saturated almost to the edge - a rare display of intensity and depth.
With just one breath, "La Source" transports you into an imaginary basket full of dark, ripe cherries and berries. This fruity composition is underpinned with subtle herbal, spicy and leathery sounds. The sweet notes of plum jam, clove and cinnamon are tastily complemented by the delicate tones of violet and nougat. Its fragrance is unmistakably authentic and awakens strength of character.
At the first sip, the wine reveals its striking fruit sweetness and a perfectly rounded tannin structure, which combines harmoniously with a stimulating and fine acidity. It is a juicy everyday wine that is nevertheless anything but ordinary. Due to its richness, you could say that you get a glass full of opulent wine for little money. In convivial company, it harmonises excellently with spicy and rich dishes.
Instead of aubergine tart, try this wine with a savoury pumpkin tart filled with ricotta and sage cheese. Another harmonious accompaniment would be roast goose with caramelised apple slices instead of black pudding. And why not swap the grilled merguez for spicy chorizo balls?
