Nose
The 2017 Les Puits Saint-Aubin 1er Cru from Domaine Derain is a friendly conversationalist. It is open-hearted, chats about ripe grapes and backs up its statements with rich cassis and cherry aromas. He balances them with delicate ethereal notes of sandalwood, underpinning them vegetal with some boxwood and a half turn from the pepper mill. Terroir, he says, is an important theme, which he illustrates with aromas of graphite until the service pours benevolently.
Mouth
On the palate, accessible with an open approach. The fruit is lined up and framed by ripe, fine-grained tannins. The fresh acidity sets the pace and is gustatorily coated with fine grip, which ensures rapid drinking flow. It loves it roomy, builds up good pressure on the palate and yet is not a steam chatterer, but holds back nobly, the service with the food firmly in his sights.
Food recommendations from Sebastian Bordthäuser

- Pike perch on a hearty pea ragout with lovage foam
