Nose
The 2015 Saint Aubin 1er Cru "En Remilly" shows itself extremely charming in the nose with the scent of quince compote, ripe pear, vineyard peach and apple sauce. This fruity attack is accompanied by a scent reminiscent of vanilla cream, brioche and freshly churned butter. Excitement is given by the mineral and cool impression that immediately transports you to a rock by the sea.
Palate
What a beauty on the palate, the 2015 Saint Aubin 1er Cru "En Remilly" tickles the tongue with its distinct salty structure and its animating fresh acidity. It comes across as light-footed and buoyant and the higher alcohol, as with all wines from Catherine and Dominique Derain, does not show at any time in this context. A top Burgundy with storage potential that simply gives me great pleasure!
Recommendation
Be sure to decant and don't drink it too cold, a few days of opening will make it win.
