Wine information

The Chardonnay comes from the 1er Cru site Le Puits in Saint-Aubin. Just 0.6 hectares are classified as Premier Cru there, an area twice as large above Premier Cru is Village. There is an underground water source there that always supplies the vineyard with enough water. The vineyard was planted with a Sélection massale in 2000. Apart from Thomas Morey, only Dominique Derrain should actually own a share of Le Puits. The vineyard faces southeast and is situated above the village of Saint-Aubin on a predominantly calcareous, rather white soil with a fairly large amount of small pebbles. The first wine was made in 2002. Thomas Morey recommends a four-year bottle ageing. Fermentation takes place with indigenous yeasts in a combination of neutral barrel and tank. Malolactic fermentation takes place naturally and the wine remains on its lees without any bâtonnage. The new wood content is around 20 %. Sulphur is only added in the last six months in the barrel, and several times with minimal doses, so that the wine never exceeds 35 mg/l in total.

Nose

Thomas Moreys Saint-Aubin »Le Puits« 2020 works straight and elegant at the same time. The bouquet is reminiscent of lime, pencil, salt lemons and green pears with a hint of matchstick, almond and wood, which is used here in a decidedly discreet and fine way.

Palate

On the palate the SaintAubin In contrast, the taste is much fuller, juicier and creamier than the bouquet would suggest. Creamed pears and lemon curd can be found here as well as freshly squeezed lemons, a little pineapple, a hint of mango, Cape gooseberries and stone fruit. Above all, the linearity, the freshness and clarity, the fine pressure on the palate and the so elegantly used wood, which brings a little nuttiness and smoke, are inspiring here despite the maturity. In the finish, it becomes mineral, lively and always remains silky.
