Just behind the winery, in the middle of the Domaine's garden, is the Clos des Six Ouvrées. Situated at the foot of the Meursault hill, it is only a few metres away from the "Les Chevalières" site. The Clos comprises a vineyard of six ouvrées, which is the Burgundian equivalent of 0.2568 hectares. The flat site is stocked at a density of 10,000 canes/ha and consists of alluvial deposits of limestone, calcareous clay and marl and is always harvested last, together with the St-Romain site. The small nearby stream exerts a cooling climatic influence on the site.

The grapes are harvested by hand, followed by whole cluster pressing without prior crushing and two days of sedimentation in concrete. The fermenting must is then pumped into French oak barrels containing 5% of new wood, where it undergoes malolactic fermentation. The wine is then aged in barrel for 18 months, assembled in steel one month before bottling and a small amount of SO2 is added.

Color

Strong straw yellow, bright and clear.

Nose

The Clos de Six Ouvrées from Domaine Rougeot Pére & Fils shows itself with ripe fruit and a powerful to full-bodied nature. Ripe Amalfi lemons are complemented by green mandarins and kitchen herbs such as chervil, along with light aniseed notes, wild fennel and wet asphalt after a warm summer rain. The top note is ennobled by the scent of white meadow mushrooms and the salt infusion in the sauna.

Mouth

With juice and power on the nose, it oscillates between maturity, melting and depth. A powerful, complex wine, accelerated by its stringent acidity and the delicately salty minerality that underpins its extract-rich fruit. Aniseed, fennel, saffron and pome fruit mingle with candied lemon and green hazelnut. Multi-layered and compact, it develops with increasing air contact and demands the large glasses, if not the carafe.
