The Aligoté "Les Pulmes" comes from a 45-year-old vineyard below the D974 in the middle of Meursault. Hand-picked with subsequent whole bunch pressing without prior crushing and two days of sedimentation in concrete. This is followed by alcoholic fermentation with its own yeasts in used wood, then malolactic fermentation. Hand harvest, whole cluster pressing without prior crushing with two days of sedimentation. Alcoholic fermentation with own yeasts in used wood, followed by malolactic fermentation. Assemblage in steel one month before bottling without added sulphur.

 

Color

Light golden yellow with bright reflections.

 

Nose

The nose of the 2019 Aligoté "Les Pulmes" Sans Sulphite from Domaine Rougeot Pére & Fils is slightly spicier than the sulphured version. The aromatics shift towards pome fruit, sliced yellow apples and dried herbs with a distinctly spicy character. Sage, chamomile tea and dried apple rings outline the rather silent performance in the goblet.

 

Mouth

However, it makes its grand entrance on the palate with an exuberant creaminess and rich juice that is almost lavish in its generosity. The fruit is rather timid, shines with a fleshy extract and leaves the stage to the tart aromas. The impression of sage is reflected on the palate as well as mace and camomile, then notes of grapefruit, resin and sandalwood appear. Aromatically highly complex, the acidity is elegantly interwoven in the silky overall appearance.
