When Gramona sets out to make a sparkling wine out of 100% Pinot Noir
produce, everyone has to take cover. The harvest is of course done manually and the further processing is done gently by sorting table. The Pinot is cold macerated for colour extraction and then whole cluster pressed. This is followed by 25 months of ageing on the lees with a moderate dosage of 6 grams.
Color
Strong rosé with orange reflections, invigorating perlage
Nose
The nose presents itself with full power, fresh rhubarb and sugared summer strawberries and rhubarb dominate alongside slightly earthy nuances. An idea of ripe watermelon lingers in the nose.
Palate
The palate absolutely mirrors the nose, the aroma of fresh strawberries gives the wine a subtle fruit sweetness. Next to the rhubarb, the aroma of redcurrant dominates the flavour profile, paired with animating acidity and present perlage, it fills the palate and enlivens the drinking flow. Subtle nuances of ripe watermelon give the wine a pleasant freshness.
