Information around wine

The grapes of the Vorgrimmlers come from the Tuniberg, a Jurassic limestone fault plate that folded up there during the formation of the Upper Rhine Graben. On top of the Jurassic limestone lies a layer of loess of varying thickness. The grapes are harvested by hand, destemmed and, after a short standing time, pressed slowly and gently. The must is then pre-clarified and fermented spontaneously in a stainless steel cuve. The wine remains on its full lees until bottling. Only at the time of bottling do the Vorgrimmlers add minimal amounts of sulphur to the wine, bringing the total sulphur content to between 30 and 40 mg. It is bottled without any additives and fining with only very coarse filtration.

Nose

Vorgrimmler's Pinot Noir Rosé 2021 is a wine that wants to jump out of the glass with freshness. At least, you can quickly get that impression, that's how lively it seems. It smells of redcurrants, sour cherry geuze and pomegranate, some rhubarb and a little more blackberries.

Palate

On the palate, a demanding, energetic and punchy acidity quickly unfolds, which creates a lot of tension and puts the notes of sour cherries, gooseberries and currants under power. At the same time, the Rosé clearly structured with fine grip and a slight saltiness. Here, too, the Pinot Noir Rosé again very slightly reminiscent of Belgian lambic and also of its freshness.

Food recommendations by Christoph Raffelt

  • Bratwurst and black pudding with caramelised apples, onions and mashed potatoes
  • Tarte flambée with bacon, pear and Bleu d'Auvergne
  • Summer bitter salad with pears, walnuts and blue mould
