Marjorie and Stéphane Gallet met at the agricultural college in Perpignan, but initially went their separate ways. It was their shared passion for horses and later wine that brought them together again. At that time, Stéphane worked on a larger farm in Maury, while Marjorie gained her first practical experience in biodynamics in Calce near Gauby. In 2003 she borrowed money from friends and started her own business. The site was actually called Roc Blanc, named after a white quartz vein protruding from the black slate. However, Marjorie decided to rename it Roc des Anges. In the meantime, the winery is one of the top addresses in the region and comprises 30 hectares of vines on a mosaic of different soils.
The single vineyard Unic was planted in 1991, is comparatively young and planted exclusively with Grenache Noir. The soils consist of permeable, weathered slate. Finesse and transparency instead of taking Grenache to the maximum in all its possibilities are the leitmotif at Unic.

Transparent ruby red, bright and clear.
Nose
Long red pepper, cherries and laurel define the Mediterranean melange. The delicate fruit plays on the red spectrum, darkly framed by mild spicy notes, rose petals and a little incense. Ethereal and floating, the spicy facets always seem like an accessory. Stimulating like a Moroccan market, it combines complexity and finesse into a highly aromatic kaleidoscope.
Mouth
On the palate, the 2020 Unic from Domaine Roc des Anges shows a restrained nobility and a very fine appearance. The fruit is lined with silky fine tannin, everything seems more like a breath than physically present. Red-fruited and delicate, the Grenache is reminiscent of Amarena cherry, the tannins with their noble bitterness of high-proof dark chocolate. A subtle, sensitive wine with good tension and an appearance that is not determined by intensity but by finesse.
