Nose
After a note of flint and spontaneous fermentation, which is completely typical for Kai Schätzel, but quickly fades away, the Niersteiner KabiNett with the scent of lime and elder blossoms, of white stone fruit and crisp fresh pome fruit. In addition, there is a breath of apple peel, candied lemon peel and wet stone. Everything seems fresh and lively.
Palate
This freshness, this striking acid structure combines on the palate with fine sweetness, which is hardly noticeable at 11.5 % acidity. Here, an immense pressure shows on the palate. "Drink me!" it seems to shout from the glass. What a fun drinking wine this is, uncomplicated yet coming around the corner with density and sophistication. Even Kai Schätzel's simple (he has several) Kabinett provides immense drinking pleasure. When you then notice that the wine has just 7.5 % alcohol, all dams break.
