Recaredo

Recaredo's cava can be briefly described by two key terms: "brut nature" and "long ageing".

The winery is located in the Alt Penedés district of Catalonia (northern Spain) and was founded in 1924 by Josep Mata Capellades, who built the winery directly under his house in Sant Sadurnì d'Anoia.

The vineyards are exclusively composed of autochthonous grape varieties (Xarel-lo, Macabeu, Parellada, Monastrell, Garnatxa) rooted in a very calcareous soil that allows for low production volumes with high quality. The proximity to the Mediterranean Sea ensures mild winters and hot summers, which are freshened up by the autumn winds from the east, the Llevantades. 

The third generation of the family that now runs Recaredo has consolidated the bridge between tradition and innovation: manual disgorging carried out by true artisans, use of natural corks for ageing, biodynamic viticulture to extract the purest expression of the grapes, and no added sulphites.
To reflect all this care in the wine, both in the vineyards and in the cellar, no sugar is added during dosage. In this way, the wine can truly be perceived as a reflection of the territory.
After maturing for at least 30 months, Recaredo rewards us with one of the most elegant and refined expressions of cava.

Corpinnat: a pact between winegrowers and territory.

Recaredo is not only a winery, but also one of the pioneers of the new wave of cava.

Together with five other wineries (with more to be added over time), they launched the CORPINNAT project ("cor" for heart and "pinnat" for Penedés) in 2019. 
An area that, as its name suggests, lies in the heart of the Penedés under the watchful eye of the impressive Montserrat mountain range. But also a collective brand with strict rules to ensure the quality of the wines: organic, hand-picked grapes, low yields, long ageing and winemaking carried out by the winemakers. 

Thanks to this collective effort, cava is finally gaining the international attention that these wines of classic bottle fermentation deserve.

Briefly about Recaredo

Cava Recaredo builds on a long tradition. The founder Josep Mata began producing the first cavas as early as 1924. The name of the winery comes from his father Recaredo Mata. Even today, the winery works like the founders in many production steps. All bottles are shaken by hand. Disgorging is also done gently by hand without icing the neck of the bottle. For bottle fermentation, Recaredo uses natural corks instead of crown corks or plastic.

All cavas are bottled without dosage and are Brut Nature. The vineyards are located in Alta Penedès, the higher part of the growing area. Biodynamic practices have been added in recent years. The result is top quality cavas that are second to none.
