Wine profile
We are dealing here with Pinot Blanc, which comes from the special Rappenberg site. It presents itself a little self-confidently with a granite background and a fine red substrate. The vines have hardly any leeway here - they come up directly against massive rock.
Removal procedure
This wine was pressed in a basket press and fermented naturally in used barriques and tonneaus. It was left on the lees until bottling, without stirring, with a complete malolactic fermentation. Once racked in the summer of 2022, it was bottled with 30mg/l of sulphur. The Rappenberg presents itself with a residual sugar content of 2g/l.
Optics
It sparkles in a radiant golden yellow, interspersed with light green reflections.
Scent
At first, the Rappenberg edition of 2020 seems a little shy, but after catching its breath in the carafe, it shows its full range: it smells of citrus fruits, pears and apples, accompanied by fresh grapes, wine yeast, a hint of anise, herbs and green olives.
Taste
On the palate, it is taut and structured, with clear minerality and slightly iodine-like hints. Here, the palate is playfully challenged. Far from being arbitrary and opulent, this Pinot Blanc resembles the white wines from Burgundy and yet retains its own hearty independent note. Spicy and hearty dishes appreciate it as a refined counterpart.
Alternative menu suggestion
Try this wine with a creamy lentil dal with butternut squash, or with stuffed peppers topped with beef and feta cheese. It could also harmonise well with a mixture of pointed peppers, cranberries, tomatoes, aubergines and prawns.
