With wonderfully disorderly regularity, Kai Schätzel from Rheinhessen shakes up the traditions of the wine world time after time. Sometimes on a small scale, sometimes on a larger scale. With his great growths from 2014, he proved to the Prädikat Wine Estates Association that the density and greatness of a wine cannot be defined by its alcohol content and was thus the first to be allowed to market great growths with an alcohol content of less than 12.0 %vol.

Preparation

QUAI feels most comfortable when heated to about 60° C - best in a pot or water bath. Please do not boil it hotter than that, otherwise it will lose its strength, but above all its fine aromas.

Kai Schätzel himself gives the following recommendations for enjoyment

Variant I

Wash a tangerine or clementine with hot water and cut it into slices. Put half a slice per 100 ml of wine into the glass, pour QUAI HEISS over it - done!

Variant II

Try it with lemongrass or some lemon balm or a slice of peeled ginger.

Color

In yeasty haze, the wine shows a sunflower yellow with tendencies to light amber. Despite the fact that it is not clear, it has a radiant shine.

Nose

Welcome to the aroma realm. Here, all the citrus fruits jump into the Jacuzzi first. Lime and kumquats as well as grapefruit and pomelo. They are joined by notes similar to them, such as ginger, lemongrass and kiwi. Fragrant florals like those of lilac, basil and apple turn up the brightness by dimmer and hints of green pepper and hops reinforce the yeasty musty framework.

In the nose, the white mulled wine organizes a festival of lights between heaven and earth.

Palate

Celebrating the fruit exultantly and in the warming nature of a grog, the hot QUAI from Kai shows itself with the cool head. In the reverberation rather carried by herbiness and ethereal warmth, the unfiltered white mulled wine from Riesling, Müller-Thurgau, Scheurebe and Sylvaner retains its juicy freshness. Its fine-grained tannin sets pleasantly bitter accents that stimulate and skilfully contrast its fragrant perfume.

Nevertheless, caution applies, because this liter is quickly emptied.
