Founded in 2006 by Olivier Langlais, Champagne Solemme is located in the Montage de Reims, more precisely in Villers-Aux-Noeuds, where Emmanuel Brochet also lives. Olivier converted the family's six hectares to organic and then biodynamic farming methods, which he had certified in 2018. The six hectares are spread across three premier cru vineyards in the Montage de Reims and the Vallée de l'Ardre, where the geology is varied, with chalk, clay-limestone, silt, sand and the hard, so-called millstone. As is typical for this part of the appellation, Meunier dominates over Chardonnay and Pinot Noir. The vines are on average 52 years old. Olivier vinifies in stainless steel, does not chaptalise, does not filter, does not add any dosage or sulphites. These are pure wines that are aged sur lattes for an average of 36 months and reflect the typicity of the assembly very precisely.
