The terroir of the Domaine consists of granite covered with sand and silt, facing north and northeast with slight variations. This orientation naturally provides freshness and tension in the wines. For twenty years now, Jean-Charles Abbatucci has been cultivating his 20 hectares of vineyards biodynamically, but influenced by methods of phytotherapy. The plots are cultivated by horse, the greenery is kept in check by a flock of sheep in winter. The grapes are harvested by hand and transported in crates to the cellar, where they are systematically selected. The fermentation is carried out with spontaneous yeasts and the white wines are aged on the lees without stirring. The cellar is well equipped with vats, barrels, demi-muids of 600 litres, concrete and stainless steel tanks. The finished wines are stabilized naturally by cold, fining and filtering are done only when necessary. But they are given another six months to harmonize in the bottle before being put on sale.
