Wine information

Sauvignon Blanc from the Terres Blanches, i.e. from white clay on marl and Kimmeridge limestone with high proportions of oyster fossils. The Sauvignon, which has been certified organic since 2009 and biodynamically cultivated since 2015, is located in the parcels Les Champs du Roin Haut et Bas, La Côte des Prés, Les Déserts, Le Domaine du Bouchot, Les Champs Frisés, Les Genièvres, Les Bascoins and Les Champs de la Croix on a total of 8.32 hectares. The age of the vines is 35 to 40 years. Harvested at 55 hl/ha from September 19, 2019, the wine was fermented spontaneously without the addition of SO2. It was aged with 40 mg SO2 in stainless steel. Before the filling it was lightly filtered.

Nose

On the nose the Pouilly-Fumé Terres Blanches elegant and silky fine aromas of confit lemons and lemon curd, yellow pears and orange blossom. Over that is a fine breeze of iodiney spray and some crushed chalk. Overall, though, this is a warm, inviting yellow-fruited wine on the nose.

Palate

On the palate the Terres Blanches then quite punchy, bright, clear and citrusy - without losing the yellow fruity aromas reminiscent of flowers. Instead, notes of blossom and fennel pollen are added. The Sauvignon Blanc seems straight in its freshness and acidity structure, at the same time pleasantly silky and a little laid back in its overall structure. This is more subtle, more precise Pouilly Fuméthat lingers for a long time.
