Wine profile
Explore the sophistication of Sauvignon Blanc from the beloved Caillottes regions, marked by fossilised starfish and the unique Calcaire de Tonnerre, a massive limestone that has developed an unusual porous structure due to weathering. Since 2009, this 1.68-hectare vineyard has earned organic and, since 2015, biodynamic certifications in the vineyards of Les Papillons, Les Petits Papillons, Les Chantalouettes and Vaurigny. The vines here are an impressive 35 to 40 years old.

About the appearance
Sensitive, delicate straw yellow sparkles in the glass.

About the smell
The magic of the 2020 Pouilly Fumé Caillottes unfolds in a piquant bouquet reminiscent of the aroma of pears, golden applesauce, peaches and quince spread. Its essence is rounded, subtle, beautifully proportioned and exudes softness. Fine hints of anise, celery and privet complete its silky texture in a most tasteful way.

About the taste
The silky elegance is remarkably evident in the mouth, where an invigorating freshness and appealing acidity enrich the drinking experience and enhance the pleasure on the palate. A fresh and almost cooling finish follows, making this expressive wine unforgettable. You can clearly taste its Burgundian roots, which make it an ideal companion to Burgundian dishes. Enjoy this drop with oxygenation in generous glasses to develop its full potential.

New inspired meals for pairing
Be tempted by a collection of new dish recommendations that shine with this delicious Sauvignon Blanc: A celeriac casserole garnished with pears and tarragon, sea bass served with a rich caviar and onion sauce and small potatoes, and to crown it all, a tender sweetbread in a sensual Noilly Prat sauce.
