The Pouilly-Fumé is a single-varietal Sauvignon Blanc from Guillaume Sorbe. The fruit comes from some plots he owns in Pouilly-Fumé. Together with the Le S des Poëte it is always the youngest wine of the winery, and it has been aged for a little over a year, mainly in tank and in small parts in a used 600-litre barrel.

Nose
Guillaume Sorbes Pouilly-Fumé is a purist Sauvignon Blanc that appears quite pure and clear with notes of gooseberries, verbena, lime and green grapes as well as petrichor, a hint of green pineapple, pure citrus and lots of rock.
Palate
What seems almost sparse on the nose becomes immensely juicy and silky on the palate. The wine completely lines the mouth, seems open and approachable, is fresh and smoky at the same time with a lot of mouth-watering saltiness, many citric notes and a pulsating energy. A strong performance.
