Jean-Paul Metté's most popular eau-de-vie is this double brandy made from fermented Wiliam pears from the Rhone Valley. It is aged for at least 6 years in stainless steel tanks. The Poire William is characterised by a particularly fine, natural fruitiness. Hervé Schmitt, sommelier at the gourmet restaurant Le Relais de la Poste in Wantzenau, is one of the most distinguished of his guild in the whole of France. Numerous awards, such as best young sommelier of Alsace 2005 or second best sommelier of France 2008, testify to his outstanding expertise.
