Jean-Paul Metté's most popular eau-de-vie is this double brandy made from fermented Wiliam pears from the Rhone Valley. It is aged for at least 6 years in stainless steel tanks. The Poire William is characterised by a particularly fine, natural fruitiness. Tasting note by Hervé Schmitt The nose is almost of irritating purity, the fruit reveals a great finesse and a maturity that only a perfectly ripened, juicy pear can produce. A brilliant harmony on the palate that lasts for a long time. Hervé Schmitt, sommelier at the gourmet restaurant Le Relais de la Poste in Wantzenau, is one of the most distinguished of his guild in the whole of France. Numerous awards, such as best young sommelier of Alsace 2005 or second best sommelier of France 2008, testify to his outstanding expertise.
