The Po à Po consists of 100% Aligoté from a vineyard above Pommard. The north-facing vineyards produce grapes that are particularly well suited to maceration. Slow maturation preserves their acidity and thus the freshness of the wine. The wine was left on the skins for nine days, matured in used wood and bottled unfined and unsulphurised.

Nose
The nose of the 2020 Po à Po by Vins Sextant is multilayered and complex. Fully ripe quince, stewed apple and brown butter outline the fruit, while the top note contains aromas of fermented chamomile and mild spices. The wine radiates great inner peace.
Mouth
On the palate, the pippi-fine tannin sets the pace As with perfectly grown Darjeeling of the finest quality, they are perfectly calibrated thanks to the skilful maturation on the mash. They have a mouth-watering and animating effect and are crowned in the finish by ethereal cool freshness that reminds me of brook mint. A haptically sophisticated wine and at the same time a perfect introduction to the world of mash-fermented white wines. Animatingly tart with a stimulatingly cool finish and invigoratingly mellow acidity.
