Key characteristics of the wine
In the picturesque site of Heimbourg in Turckheim - the only vineyard in the village that spreads out detached from the Vosges - the Pinot Noir grapes stretch towards the sun, against all conventions in a growing region dominated by Riesling and Pinot Gris. Westerly or northerly winds ensure a healthy microclimate, while iron-rich limestone soil shapes the vines' particular character. After careful destemming, the grapes ferment in open tank, experience minimal punch down and remain on the skins for 15 days for this purpose. The wine is then aged in conventional 228-litre barrels for an additional 12 months. Bottling is done without fining or filtration, which can result in a fine deposit over the ageing period.

Fragrance profile
A first breath of Heimbourg's 2018 Pinot Noir reveals impressive depth and minerality that, with sufficient aeration, unfolds into aromas of dark cherry, blackberry and sloe. Subtle notes of truffle and bittersweet chocolate meet dark tobacco and freshly ground Kampot pepper. Restrained on the nose, but at the same time promising an exceptional taste experience.

Taste impression
An intense minerality unfolds on the palate, accompanied by plenty of grip and saltiness, with the fruit still rather in the background. A Pinot Noir with great ageing potential and the ability to stand up to Burgundy's best. The 2018 vintage is ideal for ageing, while the 2017 is already providing full-bodied pleasures.

Food recommendations
Good aeration can enhance this versatile and expressive Pinot Noir. Try it with fennel salad with caramelised puffed potatoes, crispy duck breast with morel risotto or wild boar saddle with blackberry balsamic sauce, red wine pears and homemade pasta.
