But what emerges from the glass with a little oxygen contact seems all the more seductive Sour cherries, wild raspberries, cassis and fresh blackberries make the start. On the palate, as expected, it is powerful with demanding sour cherry fruit and a striking, youthful acidity and tannin structure.

Information on the place of cultivation
The forty-year-old vines from which this wine comes thrive on soils of limestone and sandstone in the proven Grand Cru Pfersigberg.

Processing
The grapes used to make this wine were vinified infusion-style rather than extraction-based. Spontaneous fermentation in tank included 40 % whole clusters, followed by 17 months of ageing in oak barrels. Malolactic acid reduction took place in the spring without any subsequent fining.

At first glance
The wine presents itself in a rich violet-red, which only lightens to a minimal degree towards the rim of the glass.

Fragrance intensity
The 2018 Pinot Noir "Grand P" is a little reserved at first, but with sufficient oxygen contact it unfolds seductive notes of sour cherries, wild raspberries, blackcurrants and fresh blackberries. With longer aeration time, aromas of noble, dark chocolate, soil, tobacco and truffle emerge, underpinned by delicate spicy notes such as cinnamon, juniper and clove. The stony minerality is particularly striking, giving the wine an almost mystical note.

Taste impressions
On the palate, the wine is powerful with dominant sour cherry notes and a striking, youthful acidity and tannin structure. A calm, balanced wine with the distinct character of a great Burgundy that sets new standards for the interpretation of an Alsatian Pinot Noir. Those who want to enjoy it while it is still young should decant it sufficiently; even after a day of opening, the wine still has a lot to offer. Flavour-intensive dishes harmonise perfectly with this wine.

Alternative food recommendations
Try a Parmesan cherry risotto with roasted entrecote and glazed beetroot cubes or a tender loin of venison with redcurrant sauce and cinnamon, served with creamy celeriac puree and mashed potatoes dauphine.
