Brilliant amber colour sparkles in the glass. This 2005 Pinot Gris Heimbourg Sélection de Grains Nobles seduces the nose with a duet of spice and sweetness. Seductive notes of dried fruit, honey and resin emerge, accompanied by nuances of white pepper, galangal and cardamom. Further back, delicate hints of cedar and an old tobacco box can be detected.

On the palate, the 2005 Pinot Gris Heimbourg Sélection de Grains Nobles impresses with a balanced interplay between concentrated sweetness and tart spiciness. It is a wine that harmonises excellently with savoury dishes as well as sweetish desserts.

The Heimbourg, a west-facing vineyard, offers ideal growing conditions that were particularly conducive to the development of noble rot in 2005. This resulted in a Pinot Gris with intense notes of noble rot, beeswax, honey and resin. The palate is seduced with flavours of apricot and white fruits, while the excellent sweetness is perfectly balanced by the considerable alcohol content. The finish is long and persistent. This outstanding TBA offers exceptional ageing potential.

And when it comes to pairing, why not try dark chocolate with salted cashew filling and pralines? A roasted date wrapped in bacon could be another interesting combination. And if you prefer something more savoury, a cheese selection, such as a strong Stilton with dried figs, could be a good choice.
