The Heimbourg, a west-facing vineyard, offers ideal growing conditions that were particularly conducive to the development of noble rot in 2005. This resulted in a Pinot Gris with intense notes of noble rot, beeswax, honey and resin. The palate is seduced with flavours of apricot and white fruits, while the excellent sweetness is perfectly balanced by the considerable alcohol content. The finish is long and persistent. This outstanding TBA offers exceptional ageing potential.
And when it comes to pairing, why not try dark chocolate with salted cashew filling and pralines? A roasted date wrapped in bacon could be another interesting combination. And if you prefer something more savoury, a cheese selection, such as a strong Stilton with dried figs, could be a good choice.
