Nose

The nose of the 2015 Pinot Gris Clos Windsbuhl from Domaine Zind Humbrecht starts with a fanfare of candied orange peel, candied apricots and acacia and cinnamon blossoms. Stewed quince, salty hazelnuts and gingerbread follow on the heels, and vetiver and autumn leaves provide the necessary bass. Stand at attention!

Mouth

At the palate it continues tightly. The balance of sweetness and acidity is picture-perfect and is coolly underpinned by salty minerality. It gives it drinking traction and provides a grippy texture on the palate that makes the glass refill quickly. The chalky soils of Clos Windsbuhl are the ideal prerequisite to show what Pinot Gris is capable of. Now or in 20 years.

Food recommendations from Sebastian Bordthäuser

  • Turnip goulash with star anise, pimento d'Espelette, potatoes and carrots
  • White fish lacquered in soy with spicy sweet potato puree
  • Terrine of wild pheasant with pistachios and rosehip confit
