If you take a look at the 2007 Pinot Gris Clos Jebsal Sélection de Grains Nobles, you will immediately notice its intense golden yellow colour, which is underlined by pronounced amber reflections. It stands there almost sparkling and captivates every observer.

The aroma of the wine is dominated by the sweet notes that take on the aroma of juicy, hot, airy biscuits. This is joined by the tart spiciness of malt as well as the gentle undertones of light brown tobacco. This is followed by a surge of minerality that, together with the scent of dried fruits and floral notes that evoke associations with thyme, broom and chervil, creates a powerful aroma potpourri.

Looking at the wine from the side of the taste experience, the 2007 continues to hold surprises in store. It seduces with a harmoniously integrated play of sweetness and acidity, which is accompanied by juicy fruit notes, liquid blossom honey and invigorating herbal aromas. This makes the wine a special sweet wine experience, which is currently still in a youthful stage, but already promises a lot of potential for future developments. As the grapes in Clos Jebsal ripen early, there are special opportunities for selection and independence from the weather.

This wine seems to have embodied the magic word "balance" when it was probably no better Trockenbeerenauslese in 2005. An almost immortal wine that could certainly spend an eternity in the cellar.

To underline the complexity of this wine, a wide variety of dishes lend themselves as accompaniments: A velvety duck liver pâté with freshly picked figs and hazelnut bread, a touch of oranges and lemons transformed into a savoury gratin studded with tobacco ice cream, or perhaps a baked goat cheese delicately wrapped in prosciutto and drizzled with thyme honey. Each of these combinations promises a highly enjoyable adventure for the senses.
