Wine information
The grapes of the St. Laurent come from the Rosenberg site, an eastern slope in Breitenbrunn am Leithagebirge that is strongly characterised by mica slate. Harvested by hand in mid-September 2021, pressed as whole clusters, fermented spontaneously and bottled with their own yeast during fermentation. Disgorged in March 2022 without dosage and without addition of sulphur.

Nose
A Pet Nat is supposed to be an invitation, and that is exactly the case here. The blanc de noir ensnares you with its aromas of quince, pears and ripe stone fruit, apple pie, kumquats and raspberries. Added to this are herbs, a little hay and tea. It seems so fresh, so juicy, and when the carbonic acid hits your nose, you want to drink it straight away.
Palate
On the palate the Oh when the Saints ... with a tactile lively perlage and a creamy texture. The citrusy, crisp acidity is balanced by a fine touch of yeast and fruit sweetness. Flowers are found here, lots of juicy, bright fruit and again and again this driving acidity, minerality and perlage. What a fresh sip!
