Wine information
The grapes for the blanc de blancs are harvested in the slightly higher, cooler vineyards at the beginning of the harvest. They are Riesling, Pinot Blanc and Auxerrois. After spontaneous fermentation of the base wine, traditional bottle fermentation takes place with 24 months of ageing on the lees in the bottle. Disgorgement was from July 2021 with 2.9 g/l dosage.

Nose
The blanc de blancs is a clear, fresh and racy sparkling wine whose aroma spectrum is reminiscent of lemons and limes, ginger and lemon curd with green apples, pears and mirabelles. Added to this is a fine yeasty note that suggests finesse and elegance.
Palate
On the palate, the sparkling wine appears juicy and bright, lively and clear with fine acidity and a lively and medium-fine perlage. At the same time, the sparkling wine appears creamy and offers a maturity that, despite the discreet dosage of 2.9 grams, brings with it a fine sweetness that responds skilfully to the acidity. This has pretension, but at the same time comes across as pleasantly uncomplicated and easy to drink.
