Nose
The nose is Mediterranean without being warm. Hay, dried flowers and herbs clearly dominate. White and yellow flowers appear in the glass. Especially thyme, lavender as well as acacia blossom and camomile stand out. This is already strongly reminiscent of herbal and flower teas. Green olives, capers, quince tart and tarte tatin set clear contrasts in the aromatics. A little almond and marzipan also spreads through the glass as the temperature rises. The depth and richness of facets are enormous. The wine changes in the glass every minute.
Palate
On the palate, it then presents its full potential. Pedra de Guix lives from an intense, dense structure. Full of pressure and characterized by a delicate tannin, it pushes fruit, herbs and flowers on the palate. The lime in the subsoil strikes out into a spicy minerality. Not in a chalky linear manner, but more playful, fruity and wild. Despite the hot climate in Priorat, Dominik Huber succeeds in bringing an incredibly elegant wine to the bottle. Mediterranean spice, ripe apples, caramelized quinces, acacia, almonds, hay... The round of aromas in the aftertaste feels endless and generously sprawling. The multi-layered mouthfeel makes the drinking experience a very special moment, sip after sip.
