The 2021 Pecorino smells of a variety of herbs, of almonds, apple and citrus fruits. Fine aniseed notes meet the scent of salty sea breeze, soy sauce and mussel shells. Compact, spicy and mineral, you are pleasantly put in the mood for the first sip as soon as you smell it.
Palate
Spice is also what determines the palate, the fine fruit remains rather in the background, but flashes refreshingly with apple and citrus notes. The salty impression and its fine minerality go just perfectly with Italian-inspired antipasti and dishes.
