Wine information
The cuvée Particules Crayeuses is the current flagship Blanc de Blancs. The fruit comes from vines at least 40 years old from the Côtes des Blancs communes of Chouilly, Cramant, Avize, Oger and Mesnil-sur-Oger.
The grapes were harvested by hand and pressed in a traditional 4,000 kg Coquard press. Only the juice from the first run was used for fermentation. It was fermented spontaneously partly in stainless steel tanks, partly in 600-litre demi–muids from Burgundy fermented and aged. Malolactic fermentation took place spontaneously after alcoholic fermentation. The base wines matured for six to 18 months, followed by 24 to 36 months of ageing on the lees. Particules Crayeuses is an assemblage of two vintages plus 30 % from a solera started in 2013. The dosage is 0 g/l. Unlike most other champagnes, the pressure is 4.5 bar instead of 6 bar.

Nose
The cuvée Particules Crayeuses Zéro Dosage The aroma does not yet differ significantly from the Cuvée Extra Brutat least not at first. In fact, you find the same wonderful melange of a chalky component with a lot of citrus power and brightness. Noblesse and elegance, delicacy and sensuality are also evident. Then, however, the champagne builds up more tension in the fragrance, it remains more citrusy than with the Extra Brood, chalkier and a little steely. There is also a hint of almond slivers and toast.
Mouth
On the palate, the difference of 4 grams of dosage becomes even more obvious. The grand cru draws its power and tension from the use of old vines deep in the different chalk soils, appears bright and citrusy, punchy and energetic. The power meets an elegant mousseux, and because of the pressure of only 4.5 bar, a wonderful creaminess and a certain vinosity develop at the same time. The bright fruit is accompanied by spices, some vanilla, warm toast and almond cream. This is already fun.
