Nose
Barbera is fortunately in stark contrast to Nebbiolo. Two worlds of red wine from the same region. And completely different wine profiles. Full of fruit concentration, it makes an impressive start. Blackberry, black cherry and red currant. Roasted coffee, some mocha and warm leather add delightfully dark, balsamic flavors to the overall experience. Dried fruit provides a deep, intense note that unfolds with air in the glass. Violets and pansies cover the floral part. A bit of chalk, wet stones and dried herbs round out this attractive nose.
Palate
And exactly for this pleasure you can only love Barbera in this style. Instead of tannin, it is bursting with acidity. The Pairolero from Sottimano is full of juice. The rich fruit interacts with the acidity and the brilliant astringency. The mouthfeel alternates between fleshy and silky. The fine minerality of the Langhe clothes this wine with silk and makes it elegant. It leaves a cool stone-tinged sensation that gives it finesse. The dark fruit nails the palate with light herbal aromas. Again and again, small acid peaks provide lively moments.
