Info

Olivier Horiot's Solera is made from seven grape varieties that were planted together in one parcel in 2008. Arbane, Petit Meslier, Chardonnay and the four Pinots, Pinot Blanc, Pinot Gris, Pinot Meunier and Pinot Noir. The base wine is vinified in barrels according to the solera principle, so that the cuvée with a high proportion of ripe wines has an even, vinous character.

Bright straw yellow, green reflections, small bubbly perlage, restrained mousseux.

Nose

The nose combines two elementary components. Firstly, the typical Horiot barrenness, stoniness and minerality can be literally smelled. Secondly, it reveals very vinous, ripe moments. Pecan pie, shortbread and yeast plait dominate the aroma field. The direct followers are khaki, peach and apricot. Candied quince and dried apricot keep pace. Almond brittle and walnuts provide a tart touch at the back of the field. Lemon zest and oyster shell as well as some spray can be detected.

Palate

On the palate, it then reveals its taut, mineral framework, carried on the wave of acidity. In contrast to the other bottlings by Olivier Horiot, however, the Solera feels softer, gentler. Waves also bring out the minerality alternating with the fruity flavours. The linear expression of the base works wonderfully with the maritime, citrus aromas of the nose. The counter wave then exposes mainly the yellow fruits as well as nuts and pastries. As an overall package, very balanced and pleasant. It also continues this game for a long time in the finish.
