Giusto Occhipinti and Giambattista Cilia apply the same standards to the production of their olive oil from 100% Tonda Iblea as they do to the production of wine. Grown on trees well over a hundred years old, COS cultivates 18 hectares in the Contrada of Piraino near Chiaramonte Gulfi. There is the home of this old, autochthonous Sicilian variety, for whose preservation a consortium was founded. Traditionally, the olive harvest ends the autumn after the grape harvest.

Nose
On the nose, the Olio Extra Virgine di Oliva Biologico from the Azienda Agricola COS is multilayered with profound freshness. In addition to aromas of fresh green olives, it smells of freshly mown summer meadow, sorrel and goutweed. The juvenile vegetal notes are spicily underpinned by thistles, cardoons and artichokes, lemon verbena in the top note balances the cedary twist of white pepper and the distinctive scent of tomato leaves.
Mouth
The oil from 100% Tonda Iblea lays over the palate like a freshly mown English lawn. With creamy texture it appears soft with silky calm flow. Balanced by its fine acidity and mild spiciness it reminds of green hazelnuts. Fruit accentuated and mild in the long, persistent aftertaste.
