Tuscany is considered the northern fringe of Italian olive oil production. Due to the cool winters, it happens from time to time that the olive growers experience enormous losses due to severe frost damage. In the negative sense, infamous winters were 1956 and 1985, in which 80% of the tree population was destroyed in each case. In February 2018, this happened again for some varieties in cooler olive groves. As a result of these cuts, Tuscany's olive trees are significantly smaller and younger on average when compared to southern Italy. Accordingly, the productivity of the trees is also lower and is currently in Tuscany at 1 liter per tree. In comparison, 10 litres per tree are not uncommon in southern Italy. The production costs rise conclusively.
Corzane e Paterno was in the past more famous for its oils than for its wines. An ancient stone mill still stands as a witness on the estate. However, for many years they have strived to keep the quality consistently high and even improve it. By experimenting with extraction technology, they have been able to achieve significant successes. Together with a small group of quality-oriented producers, they work with an experimental olive oil mill. An astonishingly high number of the highly rated Tuscan olive oils come from this mill. Publications like Der Feinschmecker, Gambero Rosso, and Merum have been awarding top ratings to Corzano e Paterno's oils for years.
In the 2020 vintage, three oils were produced. Classico is a cuvée of the typical Tuscan varieties Frantoioi, Moraiolo, Pendolino and Leccino.
Classico is made from 30% Frantoioi, 35% Moraiolo, 15% Pendolino and 20% Leccino. Similar to a wine, the different varieties bring other sensory attributes to the overall experience.

Color

Translucent, bright lemon yellow with clear green reflections

Nose

The Classico Extra Vergine of Corzano e Paterno shows yellow fruity and lively. The nose reminds of kaffir lime, zests of green and yellow citrus fruits. Also a little ginger, avocado as well as apple flow out of the glass. A hint of anise accompanies this otherwise surprisingly non-vegetable oil. Hazelnut and pecan sound discreetly in the background.

Palate

The Classico spreads generously and benevolently. Only a slight sharpness sets in at the palate. The bitter tones seem nutty, dominant and lining. This nutty note remains pleasantly present for a long time. The intensity is high, but without being loud. Very good balance between fruit concentration, bitters and spiciness. The aroma becomes literally more and more in the finish.
