Tasting note from dated 04.10.2021, Copyright Sebastian Bordthäuser

The location 'Im Sonnenschein' was created by the lowering of the Rhine Graben and the resulting uplift of the Palatinate Forest. As a result, deep Triassic geological formations came to light around Siebeldingen around 220 million years ago. The soils here are strongly dominated by shell limestone, the vineyards are situated at an altitude of 180 to 225m above sea level and are laid out with a 5 to 20% slope in a purely southern orientation. The grapes for this Pinot Noir come from the barest and stoniest plots of up to 60 year old vines on south and south-west facing slopes. After manual harvesting, they were destemmed and macerated on the skins for about three weeks before the bunches were individually pressed. The wines then matured in barriques for 19-20 months, with BSA taking place spontaneously during the two years of ageing and maturation.

Color

Transparent ruby red with a light fading rim.

Nose

The 2016 Spätburgunder Großes Gewächs Im Sonnenschein from Ökonomierat Rebholz radiates red-fruited and joyful from the goblet and smells of pome and stone fruit, always surrounded by delicately smoky notes with a clear spicy twist. Cherries and mulberries mingle with allspice, black pepper and bay leaf, with the almost ethereal wood spice hovering above. Multi-layered and complex with immense depth.

Mouth

Light-footed on the palate, it combines its playful fruit with a profound spiciness whose ethereal nature is reminiscent of an oriental bazaar. Sandalwood, cedar, black pepper and bacon combine with the lively acidity, always interwoven with fine tannins. A wine that, despite its dark spiciness, is carried by transparent freshness and filigree silkiness. Aromatically complex with an ethereally cool finish.

Food recommendations from Sebastian Bordthäuser

  • Wild mushrooms braised in red wine with fresh baguette
  • Loup de mer grilled aubergine, white polenta and beurre rouge
  • Saddle of venison with bay cherries and savoy cabbage praline
