The idea of the circular economy of an ideal biodynamic farm includes many components. In addition to wine, these include, for example, animals, vegetable, fruit or cereal cultivation. At Odinstal, where this idea of circular economy, holistic, sustainable agriculture and also permaculture is implemented, there are cattle and also orchards. From these meadow orchards come the apples for the cider, which is known as the Pétillant naturel is produced. In the process, the fermenting cider is filled onto the bottles and continues to ferment in the bottle.
Color
Slightly cloudy golden yellow, as unfiltered, and with a very slight perlage.
Nose
The nose of the 2020 Cider Pet Nat lets you dive straight into the world of ciders, cider, apple peels, but also into the world of the Vin naturel with its wild notes of hops, tobacco and sour beer à la Geuze. The Cider shows a slight oxidation in the clear and quite clean aroma.
Mouth
On the palate, too, the first association is Geuze or Lambic, then cider. It is this special kind of acidity that fascinates and is underpinned by a fine perlage and a distinctive tannin. The fruit is pronounced and alternates between crisp and mellow, yellow and red. The apple varieties were mainly tart, hardly sweet and only conditionally fruity. Accordingly dry is the Pet Nat, and of course that calls directly for food.
