Wine information

The Morillon comes from shell limestone, limestone marl and clay soils of the Zieregg, Sulz, Wielitsch and Ottenberg sites. The vines are between 15 and 55 years old. Spontaneous fermentation and slow fermentation down to 1.9 grams of residual sugar with 6.4 grams of acidity in large wooden barrels, followed by ageing for 18 to 24 months in large wooden barrels on the fine lees. Then bottled unfiltered.

Nose

Tements 2020s Morillon shell limestone is characterised by its very own character. It is composed of an aroma of fresh as well as mellow apples with peel, pears, carambola and ripe lemons as well as a slightly exotic note, which is accompanied by smoke, some lime and gooseberry.

Palate

On the palate the Morillon Charmingly fresh and juicy with an elegant acidity and a buttery texture. Delicacy and elegance play the main role here, but are supported by power and meatiness. Silky and finely woven, this is a wine whose fruit is composed of white-fleshed fruit, a light green citrus and white berries. It is a Chardonnay that already appears coherent and harmonious now, but definitely has potential for another ten years.

Food recommendations by Christoph Raffelt

  • Roasted mushrooms with Parmigiano Reggiano, air-dried ham and egg yolk
  • Calf's liver with parsley and jacket potatoes
  • Creamy cabbage sprouts with chestnuts and nutmeg
