Wine profile
This impressive drop is a careful composition of 65 % Corvina, 30 % Corvinone and 5 % Rondinella. The vines thrive at altitudes of 500-650m in the picturesque hilly landscape of the Fumane Valley, on a mixture of limestone and red marble. After a second fermentation phase on the Amarone must, the wine is aged for a full-bodied 24 months in French barriques.

Appearance
Its dense garnet red coat is perfectly complemented by shimmering violet reflections.

Scent
The bouquet is a feast for the senses: opulent fruit notes of berries, cherries and fresh figs dance with floral accents of roses, fresh rosemary and thyme. The romantic composition is underpinned by deeper tones of undergrowth, autumn leaves, noble mushrooms and completed by nuances of wood smoke and liquorice. A seductive charmer that awakens the anticipation of the first sip.

Taste
On the palate, the 2018 Valpolicella Monte Tabor Ripasso then unfolds all its magic: sweet notes meet a lively acidity and supple tannins that form a pleasantly balanced structure. This juicy consistency is accompanied by subtle minerality and offers an excellent complement to Mediterranean dishes, especially from Italian cuisine.

Food recommendation
Served slightly chilled, we recommend ribbon noodles with broccoli, caramelised onions, capers and feta or a tender chicken breast served with chanterelles and roasted garlic bread. A braised wild boar stew served with mango chutney and polenta also harmonises perfectly with this evening companion.
