Wine profile
The Minimalist's second vintage comes from a blend of Silvaner, Bacchus and Traminer, whose natural fermentation was carried out as a white wine. The Traminer adds a distinctive note, but it is not overpowering. The style of the wine reflects the traditional approach of cam-pressed wines, a practice that has been taking place in Georgia for over 7000 years. This method produces highly digestible wines due to its unadorned and minimally sulphured style.

Editing
After the manual harvest, the grapes were destemmed and left to ferment together with the skins for ten days. After pressing, the wine was transferred to a stainless steel tank where it was allowed to mature on its full lees for more than two years. Before bottling, the Minimalist received a modest addition of sulphur of about 20mg/l.

Colour palette
The colour presents itself as cloudy gold with orange reflections.

Fragrance
This 2019 Minimalist smells of ripe apricots, apricot skin, apple and quince, with notes of elderberry and rose petal added and hints of lily of the valley, fresh ginger and lemon balm. An enticingly complex fragrance under a dense veil reminiscent of wine yeast. The aromas can be wonderfully brought out through a decanter.

Taste experience
The freshness, combined with a minimalist and purist structure that pleasantly stimulates the drinking flow, is admirable. In addition, there is plenty of spicy fruit, aniseed and liquorice notes and fine tannins - a masterfully vinified orange wine. Matching dishes can be as exciting and complex as the wine itself.
