The Jobard family has a very long tradition in viticulture. They don't know exactly, but the first writings date the origin to the 16th century. Rémi Jobard's philosophy can be summed up in a few words a lot of work in the vineyard, as little intervention as possible in the cellar. The wines are consistently matured in wooden barrels, whereby the use of new barrels is deliberately kept very moderate at only one fifth. For some years now, Rémi has also been using the Stockinger half-barrel. He is pleased to note that this keeps the wines lean and mineral, and the barrels do not change the character of the wine. Rémi wants complex wines with a multi-layered aroma, not ones dominated by wood and vanilla notes. He deliberately avoids filtration. The wines get their natural stability from the long storage in the barrel over two winters.
