Nose
Matassa Blanc in 2020 smells damn intensely of chamomile blossom, almond blossom and lemon balm. Lemongrass, mint and kaffir lime leaves also strike the same note. Hazelnuts and pine nuts become omnipresent in the glass with higher temperature. Ample yeast and bread dough provide aromatic depth. Salted almonds, white pepper and a little smoke then provide a good dose of spice. It completely hides the warm Mediterranean climate. Its reduction is fine and restrained.
Palate
On the palate, it shines with juiciness. With a lot of expression and power, it convinces completely weightlessly. A lightweight in the context of its origin. The saltiness paired with the citrus notes and a pleasantly present acidity works congenially. Open in the fruit and underpinned with a fine bitter note. With increasing oxygen, some ripe apple and pear develops in the finish. The nuttiness also comes neatly onto the pedestal of perception. Absolute pioneer in this style - pure avant-garde.
