Nose

This Passito di Pantelleria is based on the aromatic grape variety Muscat d'Alexandrie. The nose combines candied zest of lemons, oranges and mandarins. Candied ginger and pineapple can also be discovered. Dried fruits such as apricots, figs, dates, sultanas and peaches complement this incredibly well. Some of the fruits could also be interpreted in gelled form with chocolate icing. Fruit sweetness is enlivened with abundant fresh accents. Please do not take all this concentrated fruit as tired Quite the opposite! The nose is extremely lively and varied. Orange blossom, jasmine and orchids provide delicate floral accents. Melted chocolate acts as a link. Quinces and pears can be perceived in caramelised and baked form. Acacia and forest honey, along with plenty of juice from lemons and oranges, put the aromatic crown on it.

Palate

The palate fits in with the nose and its impressions like a zip. For all its concentration, the fruit presents itself with a lot of life and freshness. Bitter, sweet and sour characterise the interplay. In a restrained form, one even perceives saltiness. A great symbiosis of flavours. Despite the raisin-like fruit, the acidity always manages to break through to the surface. The sweetness is delicately creamy and incredibly charming. This play also continues in the aftertaste. Never too heavy, never too loud, never too sweet. Bitterness and acidity maintain the upper hand and deliver an exciting, highly interesting sweet wine that deserves much more attention.

Food recommendations from Marian Henß

  • Classic soufflé with lemon ice cream and salted caramel
  • Foie gras terrine with caramelised quince, dark chocolate and apricot gel
  • Candied bitter oranges, crème patissier and hazelnut mousse
