Overview
An artfully reworked exceptional wine is presented here, prepared from old Syrah vines stretching from the early 20th century to 2005, refined as it were by 10% Viognier and Serine. They grow on a mixture of granite, schist, glacial and gneiss soils. The wine undergoes no fining and a minimal addition of sulphur before bottling.
Colour scheme
The intense purple hue of the wine thickens to an almost impenetrable blackness at its core and maintains its effect right to the rim.
Scent
The 2018 Côte Rotie "Les Binardes" releases a multi-layered aromatic spectrum dominated by wild raspberries, blackberries, blackcurrants and elderberries. These fruity notes merge with the ethereal notes of boxwood and eucalyptus, rounded off by spicy accents of liquorice, pepper and juniper. Despite its intensity, the fragrance offers a certain degree of lightness and finesse.
Taste
From the first sip, the wine reveals an exciting freshness and minerality that is, however, more profound. It is a clever combination of sweet fruit flavours, spices, refreshing acidity and a hint of salt. The finely tuned yet highly visible tannin structure harmonises perfectly with hearty meat and game dishes. A wine with considerable ageing potential, it will leave an unforgettable impression.
Food recommendations
As an accompaniment to this wine you could consider the following dishes: Chocolate rigatoni with candied chestnuts and caramelised oranges, ox steak stuffed with bread and bone marrow served with roasted root vegetables or roast saddle of hare accompanied by a juniper and leek sauce and celeriac puree.
