This wine is made exclusively from Serine grapes planted on gneiss soil in 1992. After 24 months in small wooden barrels, it was bottled without filtration and only a minimal addition of sulphur.
Colour profile
The wine's almost opaque black hue is lightened by purple reflections at the rim.
Scent
This 2018 Côte Rotie "Coteaux de Tupin" reveals a rich fruity bouquet of wild raspberries, blueberry compote, sloe jelly, elderberries and dried plums. The seductive fragrance is complemented by undertones of elegant dark chocolate, freshly brewed coffee, black pepper and cloves.
Taste
The first sip is like diving into a velvet world of violet pastilles. Gradually, however, the acidity gains dominance and the tannins unfold, indicating that this wine will only demonstrate its full beauty after a few years. For those who cannot wait too patiently, I recommend aerating the wine ahead of time and serving it in a generous Burgundy glass to maximise this monumental taste experience.
Food pairing suggestions
Olive tapenade on toasted wholemeal bread, pigeon in liquorice sauce with Brussels sprouts and potatoes au gratin, or lamb shank slow-cooked with green beans wrapped in bacon.
