Founded in 1989, the Champagne house Waris-Larmandier, known for its five Grand Cru vineyards in the Côte des Blancs, has developed a Demeter-certified focus on old vines and perfect base wines since 2009 under Jean-Philippe Waris. The entry-level champagne Racines de Trois is a cuvée of several grape varieties, while the other white champagnes are Grands Crus from the Côtes des Blancs. Jean-Philippe attaches great importance to a gentle vinification method, vinifying his wines at 4.5 bar instead of the usual 6 bar.

The Champagne house was founded in Avize in 1989, but has picked up speed especially since 2009. The two families Waris and Larmandier, who have been producing champagne for five generations, have come together in this house. The majority of the vineyards are located in five Grand Cru places of the Côte des Blancs, but there is also a smaller part in the Montagne de Reims as well as on the Côte des Bar. Since Jean-Philippe Waris joined the winery in 2009 as the eldest son of the house, it has been certified according to Demeter standards. His focus is on old vines and on making the base wines as perfect as possible, which is why he vinifies his wines at only 4.5 bar instead of the usual 6 bar. The entry-level champagne Racines de Trois is a cuvée of several grape varieties, the other white champagnes are Grands Crus from the Côtes des Blancs.
