Wine information

This Champagne comes from a project that Bertrand Gautherot's son-in-law is realizing with grape producer friends. It is a Négociant project, where the vintners switched to organic and then to biodynamic cultivation. In the meantime, the vineyards have been Ecocert certified. The Champagne comes from the Les Revers vineyard, which faces north, lies at around 255 metres and is densely planted with around 7,500 vines per hectare. It is a single-varietal Chardonnay from a vineyard with Cimmerdige limestone in the subsoil and loam and clay in the topsoil. The vineyard is located near Buxières-sur-Arce. Whole grapes were pressed, fermented spontaneously, aged in used 350- and 500-liter barrels, followed by 15 months of yeast aging. The Brut Nature was disgorged on 18. 10. 2020.

Color

medium straw yellow with continuous perlage

Nose

The Les Revers is a Champagne, which is closer to Chablis than to the Côte des Blancs from its entire base. It is the representative of a cool region and the Kimmeridge limestone in the subsoil. And this shows on the nose through a clarity and precision that is already evident in this young Champagne is fantastic. The aroma from the glass wafts over with notes of iodine and sea, oyster shell and salt lemon, some herbs and wet lime, a little crunchy stone fruit and a hint of freshly cracked nuts.

Palate

On the palate the Les Revers just what you expected from the scent. The Champagne has the lucky punchIt shows power and pressure, freshness and minerality. It is clear and precise, always on the very bright white-yellow side with a few sprinklings of green ripe notes, blond tobacco, some graphite, white flowers and a fine tart note of grapefruit abrasion. The perlage shows itself lively and fine, the finish is long and persistent.
