Not far from Gueux and Vrigny, Coulommes-la-Montagne is located in the so-called Petite Montagne de Reims. The village is known for its Pinot Meunier, which makes up 65 % of the Premier Cru sites. There, Jean Servagnat produces two champagnes of around 3.5 hectares. Above the village, in the northwest, the vineyards are arranged like an amphitheatre and are dominated by Pinot Meunier. There, the grapes for the single-varietal Les Meuniers Insomis grow on loamy limestone soils. For his Les Galipes de Coulommes, he also uses Pinot Noir from the sandier plain and Chardonnay from Les Vignes Dieu, where Bonnet-Ponson also has plots. From the beginning, Jean Servagnat has focused on organic cultivation. In the cellar, fermentation is spontaneous, partly in inox, partly in wood, and malolactic fermentation is carried out. The champagnes are dosed only minimally, just so that they are in perfect sensory balance.
