Nose:
The nose of the Les Fontaines R16 Rosé is razor-sharp in the goblet with great precision: red fruits such as raspberries and cranberries are always balanced by delicate yeasty notes that are never in the foreground, but quietly moderating in the background. This makes Les Fontaines seem very vinous and takes a bit of the edge off it. In the glass, it expands visibly, which brings it effortlessly from the aperitif situation to the table.
Mouth:
The cuvée of 85% Chardonnay and 15% Pinot Noir is delicate on the palate without missing the necessary hedonism of a serious rosé. It comes across a bit like Burgundy with bubbles and, despite rich fruit, is never dissolute but always straightforward and focused. The acidity of the Chardonnay races across the palate and is surrounded by the vinous extract of the Pinot. Dosed with only two grams of residual sugar, it is dry as a rock with maximum juiciness. A hell of a rosé champagne and only 1350 bottles of total production.
