Nose
Apple and orange blossom float over notes of Arabian sugar cookies and pear compote. The 2015 Le Haut-Lieu Moelleux is still a fresher, just coming into the world, yet already open and present. With more air, candied orange peel and some persimmon mingle with the bright and fresh appearance.
Palate
On the palate, the Moelleux from the "Le Haut-Lieu" vineyard has more extract spice than the Sec and Demi-sec. Nevertheless, the Moelleux remains on the bright and light-footed side. Above all, the wine is juicy, the aromas are reminiscent of pear and stone fruit, with some wild strawberries mixed in. Of course, one senses some sweetness in this Moelleux, but it is completely integrated into the freshness, into the clear acidity that furthers the saline-mineral aspect of this wine. As bright and clear as the Le Haut-Lieu is, it should be served above all with sea fish and shellfish.
